A Note from Lowcarbology

When I started this blog many years ago, I had no idea that it would grow as fast as it did. Thank you all for your generosity of your friendship. I have had so much fun learning to eat low carb and sharing my journey with you.

Why Low Carb?

I never really had a weight problem, at least not in my younger days. I have never been a big eater and I hovered between a size 4 and 6 until I was in my 30s. ?After I had my third child I seemed to carry and extra ten pounds that just wouldn’t go away. I had five more children and each time lost back down to that ten pound mark. I decided to live with it? After all, an 8 wasn’t so bad, right?

I gained about 40 pounds with my eighth child and after she was born (just under nine pounds,?my smallest baby) I lost a total of (wait for it?)

Three pounds. Three.

For the first time in my life I was fat and I hated it. Even low carbing wasn’t working!

Turns out I had several tumors and cysts on my thyroid so out it came. I went on medication with high hopes of losing the extra weight?? and didn’t. I began to keep track of my weight and finally found that cycling induction worked best for me, albeit it was slow going. I will stay on induction until I hit a plateau and then I will maintain my weight for a month or two. Once I know I am stabilized I will start induction again and so on.

Since my surgery in August of 2009 I have lost 35 pounds. It has been slow, painfully slow, but I am wearing a size 6 again and I bought a bikini this year (2013), much to the delight of my husband.

I won’t lie, I still have at least 15 pounds to go and I definitely need to firm up but at age 53 I am pretty satisfied with how I ?look overall.

Everyone has problems to overcome, right?

I am a food writer. I develop luscious desserts, amazing baked goods, and all kinds of yummy stuff.?Have you ever tried to develop a recipe for fudge brownies without tasting them? Now that’s a handicap!

I like to eat good food, not boxed stuff, not mixes, not stuff with 500 different chemicals that you can’t pronounce. The food you’ll find here on Lowcarb-ology will be fresh, homemade, and awesome. I will review other products from time to time to introduce you to products I think you’ll find helpful.
