A Dark and Stormy cocktail is just about as easy as it gets and this low carb version is every bit as good as the original. Simply made with a good dark rum, sugar free ginger beer and a little lime, it’s perfect for a blustery November afternoon. The lime juice accounts for the 1.5 carbs in this drink.

November first is the beginning of the most difficult two months of the year for me. It starts with the Halloween candy going on sale for pennies on the dollar and ends with New Years’ Day buffets of cornbread, mustard greens, and black eyed peas. Of course those amazing Southern desserts are always calling my name from the sideboard. In between Novemeber 1 and January 1 there are weeks of party food, fudge, Christmas cookies, and cocktails.
Maybe some people can skirt it but as a food writer I can’t. This time of year I’m creating and photographing Mother’s Day recipes for the magazine I work for, I’m creating holiday recipes for companies, and of course sharing on Restless Chipotle, my regular blog. I’m doomed, y’all.
I’m not without a little help, though. I try to ease up on myself on the weekends and maintain a very low carb eating plan during the week. Allowing myself 5 pounds of weight gain helps… it’s going to happen anyway and if I won’t freak out and binge eat maple fudge when I see the scale creep up a little. I always go back on induction in January and it get’s me back on track.
Sigh. Just in time for Valentine’s Day!
Low carb treats and low carb cocktails are a big help, though. This easy Dark and Stormy cocktail is one of my secrets. Spicy, sugar free ginger beer adds no carbs and adds sparkle and flavor to the rum. Lime balances out the sweetness. It’s sort of a gingerbread flavor but not quite — I’ve always loved it.
If you love rum then this is the drink for you. Just make sure you get a good rum and a really excellent, spicy ginger beer or it will be sort of … eh.

Dark and Stormy Cocktail Recipe
- 2 ounces dark rum
- 1/2 lime
- 4 ounces sugar free ginger beer diet
- lime wheel for garnish
Fill a highball glass with ice.
Add the rum and a squeeze of the lime.
Fill with the ginger beer and garnish with the lime wheel.
