Chili Dog Bake: Low Carb Cheesy Goodness

When you get a craving for some junk food give this easy low carb chili dog bake a try. It’s made with my dark and spicy Texas chili, all beef hot dogs, and plenty of cheddar cheese melted on top. You definitely won’t miss the bun!

Y’all this is one of those recipes I am almost embarrassed to publish because it’s just so dang simple. Chili dogs with plenty of cheese and onions were one of my guilty pleasures BLC (before low carb). I honestly could eat them all day, every day. And sure, you can make them low carb by using canned chili and just leaving off the bun but I like my spicier version of chili on it. Monterey Jack cheese is amazing on top as well.

So I like to make a big batch of the chili and freeze it in serving sizes. That way when I want something that requires chili like my favorite chili dog bake recipe or just a bowl of red I thaw it out and use it. So easy.

This is one of those lunches or quick dinners I go to when I’m in the middle of a client project and I’m eating at my desk so to speak. It’s just about instant and it fills me up, too. Since it’s pretty high in calories it’s definitely not an everyday thing, though.

One thing that really helps me in my meal prep is my vacuum sealer. If I don’t want to freeze something it’s ok for the short term because a vacuum sealer keeps food fresh longer. I can store my meals up to a week or more (sometimes) in the fridge if they are vacuum-sealed. They stay fresher in the freezer, too! Mine has been going strong for 8 years!

Chili Dog Bake Recipe

I love the chili dogs at Sonic… and they are terrible for you. Not to mention that I used to like to grab a root beer float right along with my foot long chili dog! If that’s one of those things that makes your mouth water, you are not alone! Give this recipe a try and serve it along with a sugar free root beer with 2 tablespoons of heavy cream and a splash of sugar free vanilla syrup.

Chili Dog Bake

These easy chili dog bake can be made in the microwave for 1 or 2 OR you can make a bigger batch for the whole family to enjoy.

Ingredients

  • 1 serving Lowcarb-ology Texas Style Chili , recipe on site
  • 1 all beef hot dog , make sure it’s 1 carb or less
  • 2 tablespoons Cheddar cheese grated
  • 1 teaspoon onions , diced

Instructions

  • Slice the hot dog.
  • Mix the chili and the hot dog together in a microwavable dish or oven safe dish.
  • Microwave until heated through – or about 1-1/2 minutes. OR bake on 375F for 10 minutes.
  • Top with cheese and onion before serving.
