Baked Scotch Eggs Tex Mex Style
A spicy, seasoned ground beef mixture is formed around hard boiled eggs and then baked for an easy breakfast with lots of Tex-Mex flavor.

Ingredients

hard boiled eggs
shells removed

ounces
ground beef
1/8
teaspoon
chipotle powder
or less if you want it milder
1/8
teaspoon
cumin
1/8
teaspoon
smoked paprika
Salt and pepper
to taste
Instructions
Preheat the oven to 375F.
Thoroughly mix the seasonings into the ground beef.
Flatten 3 ounces of the ground beef in your hand.
Lay the egg on top of it and form the beef around the egg to enclose it completely.
Place on a baking sheet and repeat with the other egg.
Bake for 20 to 30 minutes, or until the beef is thoroughly cooked.
Serve hot.
