Enjoy this real cinnamon bread with bursts of sweet raisins that's low carb! Sounds impossible but this recipe has just 4.3 net carbs! Slice it, toast it, and spread some butter on a slice. For a change of pace, I've also spread a little cream cheese on a slice. It's surprisingly similar to eating a cinnamon roll, just without all the sugar. It's delicious for breakfast or anytime. Best of all, it's done in less than 5 minutes!

Ingredients
1egg white
1tablespoonCoconut Flour
1tablespoonflax meal
1tablespoonAlmond Flour
1/2teaspoonsugar free sweetenercup for cup
1/2teaspoonground cinnamon
1/4teaspoonbaking powder
2tablespoonsmelted butter
1/2teaspoonfinely chopped raisinsoptional
Instructions
Grease a coffee mug - tall and narrow is best.
Mix the coconut flour, flax, almond flour, sweetener, cinnamon, and baking powder together.
Set aside.
Whisk the egg white until foamy.
Add the coconut flour mixture and butter.
Stir until smooth.
Quickly stir in the chopped raisins if you're using them.
Spoon into a greased coffee mug.
Microwave for 1 to 2 minutes or until a toothpick inserted in the middle comes out clean.
Let cool for a few minutes.
Slice into 4 slices.
Toast the slices and spread with butter or cream cheese.
Notes
For best results let the bread cool completely before slicing.
