Low Carb Cinnamon French Toast
Just what you've been waiting for - an easy low carb adaptation for cinnamon French toast. The magic is in the egg mixture!

- 1 slice low carb bread
- 1/2 egg
- 1/8 teaspoon cinnamon
- 1/4 teaspoon erythritol
- 1 teaspoon heavy whipping cream
- 1/2 teaspoon vanilla extract
- 1 pat butter
Preheat griddle to 275F or preheat skillet for two minutes on medium heat.
Beat egg until it just starts to foam.
Add vanilla and whipping cream. Mix completely.
Stir in cinnamon and sugar substitute (Swerve or sweetener of your choice).
Take a stick of butter and open on one end. Hold the other end of the butter and run the open end all over the hot griddle or skillet to grease it up.
Douse slice of bread in egg mixture. Coat both sides completely.
Place immediately on hot griddle/skillet for three or four minutes on each side or until brown and crispy.
Serve with a pat of butter. You can also drizzle on sugar free syrup (optional) or add fruit.
