Low Carb Breakfast Grits with Sawmill Gravy
Cauliflower and almonds make a fairly good, low carb substitute for grits in this recipe. Learn to enjoy breakfast again!

Ingredients
Grits
1/3
cup
raw cauliflower
1
tablespoon
almonds
1
tablespoon
cream

tablespoon
unsalted butter
for the pan

Gravy

heavy cream
1
tablespoon
cream cheese
1
tablespoon
butter
1/4
cup
cooked ground beef
about 3 ounces
Salt and Pepper
to taste
Instructions
Grits
Pulse the cauliflower and almonds in the food processor until the mixture looks like crumbs.
Add 1 tablespoon of butter to a small saute pan and melt it over medium heat.
Add the cauliflower mixture and saute for about 3 minutes until tender but not mushy.
Add 1 tablespoon of heavy cream and simmer for another minute or so.
Remove from heat, add salt to taste. Use a little more than you think you'll need.
Gravy
Add the cream, butter, and cream cheese to the saute pan.
Stir over medium heat until the butter and cream cheese are melted and the mixture is smooth and well combined.
Add the meat.
Taste and add salt and pepper as needed.
Spoon the gravy over the cauliflower mixture.
Notes
The gravy freezes well but the cauliflower mixture does not.
