Cauliflower makes a good substitute for popcorn when you need a salty snack.

- 1/2 cup cauliflower
- 2 tablespoons of butter
- 2 teaspoons taco seasoning
- Salt to taste
Melt the butter
Break the cauliflower into small florets and spread in a single layer on a plate
Microwave just until hot but not cooked
Pour the melted butter over the cauliflower
Add the taco seasoning
Mix gently and eat. Grab a paper towel - you'll need it.
