Spicy Habanero Cheeseburger Soup

A creamy, spicy, comforting soup that combines ground beef and habanero cheddar for a bit of a kick. With less than Carbs: 2.1 carbs per serving you can't miss this one.

  • 1 tablespoon butter
  • 1 tablespoon finely chopped onion
  • 1/4 cup cooked seasoned ground beef
  • 1/4 cup heavy cream
  • 1/2 cup water
  • 1/8 teaspoon garlic powder or to taste
  • 2 tablespoons grated habanero cheddar or pepper jack
  • 2 tablespoons grated extra sharp cheddar reserve one teaspoon
  • Salt and pepper to taste


  • Saute the onion in the butter until soft and the onion just starts to turn golden
  • Add the heavy cream and the water and bring to a simmer
  • Simmer for 2 minutes to reduce slightly
  • Stir in all but the one teaspoon reserved cheese.
  • Stir until melted and smoothly mixed with the cream mixture
  • Add the cooked ground beef
  • Simmer for another 2 or 3 minutes so the flavors can blend
  • Spoon into a bowl and sprinkle reserved cheese on top


If you can't find habanero cheddar you can use pepperjack instead. It's important that you use strongly flavored cheese in this since there isn't that much of it. Tillamook was used in this recipe
