BBQ Baked Loaded Cauliflower
Creamy, mashed cauliflower is topped with smoked beef brisket, cheese, salsa verde, onion, and cilantro for a low carb take on those big ole BBQ Baked Potatoes!

- 10 ounces cauliflower
- 1 tablespoon butter
- 1 tablespoon cream cheese
- 1/4 teaspoon salt
- 1/2 pound Beef Brisket Chopped and cooked, preferably smoked)
- 2 tablespoons salsa verde
- 2 ounces cheese shredded
- 1 tablespoon onions chopped
- 1 tablespoon cilantro chopped
Steam the cauliflower until very tender.
Drain thoroughly and pat dry with paper towel.
Add the cauliflower, butter, cream cheese, and salt to a food processor.
Process until very smooth and creamy.
Stir in the meat and cheese.
Add the half the cauliflower mixture to an oven safe small tart pan or ramekin.
Bake for 10 minutes, or until heat through and slightly crispy on top.
Remove from oven, add the salsa verde, onions, and cilantro.
Serve with extra cheese.
Follow the same instructions but place in microwave safe dishes.
Microwave for 2 to 3 minutes, or until hot.
