Au Gratin Faux-Tatoes: Low Carb Comfort Food

Satisfy your craving for cheesy, gooey au gratin potatoes with this low carb version. Cauliflower is sliced lengthwise and layered with cheese. Add sliced smoked sausage, cooked ground beef, or ham for a comforting main dish meal with under 7 net carbs.

  • 5 ounces raw cauliflower sliced about 1/4-inch thick lengthwise.
  • Salt
  • Pepper
  • 1/4 teaspoon dried onion powder OR a few dried onions
  • 1 ounce shredded cheddar cheese
  • 1 tablespoon heavy cream
  • 1 tablespoon water
  • Butter to grease dish
  • 1/4 teaspoon smoked paprika
  • 1 teaspoon almond meal


  • Make sure to slice the cauliflower lengthwise so that it holds together and looks a little like frilly potato slices.
  • Add the cauliflower to a microwave safe dish, cover with plastic wrap, and microwave for 2 minutes.
  • Let sit for about 1 minute then carefully remove plastic wrap.
  • Drain well.
  • Gently pat dry with paper towel
  • Grease a microwave safe (1 cup size) dish with butter.
  • Arrange a layer of cauliflower on the bottom.
  • Sprinkle with a little salt, pepper, and a pinch of the onion powder.
  • Cover with some of the cheese.
  • Repeat layers until there is no more cauliflower.
  • End with the cheese.
  • Mix 1 tablespoon heavy cream with 1 tablespoon of water and pour into the dish.
  • Sprinkle with the almond meal and smoked paprika.
  • Microwave for 2 minutes or until the cheese is melted and the cauliflower is very tender.
