Slow Cooker Pot Roast: Low Carb Meal Prep Basic

This is a basic pot roast recipe that is low carb. It has lots of beefy flavor and works well in any meal prep recipe calling for beef.

Ingredients

  • 3 pounds boneless chuck roast
  • 4 stalks celery sliced on a diagonal
  • 1 onion peeled and quartered
  • 2 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1/2 cup red wine or beef broth

Instructions

  • Mix the salt, pepper, and garlic powder and rub it all over the meat.
  • Heat up a couple of tablespoons of olive oil in a heavy pan until it shimmers.
  • Sear the meat on all sides in the oil.
  • Add the meat, vegetables, and wine or beef broth to a slow cooker.
  • Cover.
  • Cook on low for 8 hours.
  • Shred with 2 forks and allow to cook 30 more minutes.
  • Use as desired.
