Slow Cooker Pot Roast: Low Carb Meal Prep Basic
This is a basic pot roast recipe that is low carb. It has lots of beefy flavor and works well in any meal prep recipe calling for beef.
boneless chuck roast
sliced on a diagonal
peeled and quartered
red wine or beef broth
Mix the salt, pepper, and garlic powder and rub it all over the meat.
Heat up a couple of tablespoons of olive oil in a heavy pan until it shimmers.
Sear the meat on all sides in the oil.
Add the meat, vegetables, and wine or beef broth to a slow cooker.
Cook on low for 8 hours.
Shred with 2 forks and allow to cook 30 more minutes.
Use as desired.
