When you think of bourbon it’s usually a fall and winter drink – hearty and robust but this Southern Belle is a summer bourbon cocktail that’s just delicious. I think it really shows the versatility of a good bourbon!

The club soda keeps it light and gives it a little sparkle. You can adjust the amount of club soda to your own tastes. I liked it light and bubbly. 🙂

It’s an easy bourbon cocktail to make by the pitcher, too. Just click on the serving size and move the bar to the number of servings you want. The ingredient amounts will adjust, too. I think it’s just about the most perfect low carb summer cocktail for sitting in a rocker on the front porch and just watching the world go by.

Not that most of us have time to do that!

So far this summer has NOT been good for either my low carb eating plan OR the gym. I kicked a chair, not on purpose, and broke my toe… again. So I can do arms and shoulders but definitely nothing that puts pressure on my foot.  No cardio without a lot of pain. Well, that would be great but my gym buddy, who is my 17 year old son, hurt his rotator cuff and can’t do shoulders.

And there’s been a lot of stress so rather than prepping my meals on the weekends I’m skipping and grabbing during the week. My new meds are starting to kick in and hopefully my energy levels and metabolism will get back to my normal. Gah! I hate this.

A summer bourbon cocktail is just the thing to help me get back on track. In fact, I’ve been focusing on low carb comfort food and adapting my family recipes that make me feel nurtured. You’ll be seeing a lot more of those in the next few weeks.

Remember that even though bourbon is 0 carb the alcohol will keep you from burning fat for a time. Cocktails tend to be something I have on the weekends because of that.

I use these Mio Water Enhancer flavors quite a lot in my low carb cocktails and if you can’t find them locally it’s more cost effective to buy them in a batch. Flavors include the Tropical Fusion you need for the Southern Belle cocktail as well as Green Thunder, Wicked Blue Citrus, and Strawberry Pineapple.
