For this recipe you’ll need: almond flour, hemp hearts, chocolate protein powder, Swerve or other sugar free sweetener, cinnamon, ginger, cloves, baking powder, chipotle powder or hot sauce, baking soda, cream of tartar, brewed black coffee, butter, unsulphured molasses, egg, and vanilla stevia liquid.

I usually think of gingerbread as an autumn to Christmas treat. All of those warm spices just seem to go with a crackling fire and some soft, wooly socks. Imagine my surprise when I found out that yesterday, June 6, was National Gingerbread Day! Crazy, huh?

So I posted my favorite recipe for gingerbread on Restless Chipotle. A reader asked if I had a low carb version and I swear I felt like an idiot. Of COURSE I have a low carb version! Not just a low carb version but a spicy, sweet, full of flavor, make your mouth tingle kind of gingerbread.

Best of all there’s no baking required — this spicy gingerbread mug cake cooks in the microwave so you won’t turn the kitchen into an inferno in July.

We have had the coolest Mays the past couple of years. It’s been great for the electric bill! You’ve probably heard about all of the flooding in Texas? Well, the one good thing about that is we are no longer in drought. It’s been in the 70s and low 80s here in Dallas and normally it’s at least the low 90s. Often it’s hotter than that. But no matter how cool the spring is I know that we will hit 100 degrees during the summer, the kitchen will get unbearably hot, and I’ll just want to feed everyone cold sandwiches.

And maybe mug cakes. Spicy gingerbread mug cakes.

If you want to add a dollop of whipped cream (made with sweetener, of course) to this low carb cake you certainly can. I like it with just a dusting of cinnamon on the top… and sometimes I just eat it for breakfast with my coffee because, why not? It’s full of protein and yumminess.

The main thing about this spicy gingerbread mug cake recipe is that you must not overcook it. It will continue to cook for awhile after you pull it from the microwave but if you cook it too long it will be dry. This is not a dry cake! And… y’all… a minute of your time, please. You’ll have to trust me on the hot sauce or chipotle. You can omit it if you want but try it just once. It adds a tingle to your mouth with each bite and enhances the cinnamon. I promise.

The other thing is the molasses. There is so very little of it that the carbs are just about nonexistent. It does add a lot of flavor but if you are worried about it just omit it with no other changes in the recipe.

Also, the nutritional calculator that I usually use is not working properly so I’ll just be giving the carbs and net carb counts for the recipes.

Liquid vanilla stevia adds another pop of flavor to this gingerbread mug cake. I’m ordering this cinnamon vanilla stevia for next time because I think it would add more depth to the spice flavor of the cake. The hemp hearts add fiber and texture but you can use all almond flour if you like.

Spicy Gingerbread Mug Cake

Ingredients

  • 1/4 cup almond flour
  • 2 tablespoons hemp hearts
  • 1 tablespoon chocolate protein powder
  • 1 tablespoon sugar free sweetener
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • 1/2 teaspoon cloves
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon chipotle powder or 1/4 teaspoon hot sauce trust me
  • Pinch baking soda
  • Pinch of cream of tartar
  • 2 tablespoons cold strong as possible, black coffee
  • 2 tablespoons melted butter
  • 1/4 teaspoon unsulphered molasses
  • 10 drops vanilla stevia liquid
  • 1 egg

Instructions

  • Spray the inside of a mug with nonstick spray.
  • Mix the dry ingredients together.
  • Mix the coffee, butter, and molasses together.
  • Beat the egg and stevia liquid and mix in to the butter mixture.
  • Mix the dry ingredients into the wet ingredients until well blended.
  • Spoon into the mug and microwave for 40 to 60 seconds.
  • It may take some practice to know exactly how long to bake it in your particular microwave.

    That was so good. Spicy, delicious.
    I didn’t use molasses and use collagen peptides instead of protein powder. It worked well for me!
    Sometimes mug cakes are a bit moist, this one was perfect.
    I microwaved for 3 minutes, though.
    Definitely this recipe will become my favorite recipe for breakfast!

  2. Everyone raves about mug cakes and for good reason but I’m over here without a microwave lol. The only time I ever miss it is when I want a mug cake or to cook a sweet potato in less than 90 minutes.
