This low-carb peach long island tea is refreshing, sweet, and perfect for a hot summer afternoon on the porch or by the pool. It’s easy to make and you’ll never guess it’s low-carb.
Alcohol actually doesn’t have carbs for the most part. It will slow down weight loss so try to keep cocktails at a minimum but once in awhile it should be no problem. I tend to save cocktails for either Saturday or Sunday afternoons since those are the times I am most likely to have people over.
I love the Peach Roadhouse Teas at Logan’s. I can’t resist them and, just being honest here, I’d rather spend my calories and carbs on one of those than a steak and baked potato! I loved them so much I decided to figure out how to make my own. And my version of a peach Long Island tea has all of that peach flavor but without the carbs.
The trick is the Mio peach tea water enhancers. They have no carbs and no calories but they have lots of flavor. The hardest part of this cocktail is stopping. I like to add a little mint or lemon balm since a Maraschino cherry is out of the question.
When I was very small my parents were friends with three other couples. It was the 1960s and the four couples would get together every week to play Michigan Rummy for pennies. Once week it would be at our house, the next week one of the other couples homes, and so on. All of us lived in the same neighborhood so it was not a big deal. Anyway, one of the men and my dad could have been characters on Mad Men. They generally hit the bourbon and martinis pretty hard when they got together. One night they were pretty tipsy and told everyone they were going outside to look at the Northern Lights. Well, it was summer in Pennsylvania and not really an optimal time to see them, especially since it’s pretty rare in the winter even. I went with them because I was my dad’s shadow. So we’re standing outside and all of a sudden you could really see color in the sky – the Northern Lights. To this day I don’t know if it was a fluke or they knew about it somehow but from that point on they boasted that they had singlehandedly turned on the Northern Lights that night.
I can’t promise that you’ll be turning on the Northern Lights but I can promise that this is one of the best Long Island Teas you’ll ever drink — and it’s low carb.
- 1/2 ounce Peach Schnapps
- 1 ounce vodka
- 1/2 ounce bourbon
- 1/2 ounce white rum
- 1 squirt of Mio Peach Tea Water Enhancer
- 6 ounces of club soda
Add the schnapps, vodka, bourbon, run, and Mio to a shaker.
Fill with ice.
Shake until well blended and strain into a glass.
Add the club soda.
Add ice if desired.
