Let’s be honest, a lot of times the hardest thing about a low-carb lifestyle is that breakfast is boring, especially if you have a lifetime of eating cereal, donuts, and muffins behind you. By the time induction is over I am usually sick of eggs that have been boiled, poached, fried, scrambled, coddled, omletted, and dumped raw into my protein shake. If that’s you too then you are going to love this low carb French toast breakfast dish.

To make this easy low carb breakfast you’ll need:?eggs, cream cheese, baking powder, hemp seed, xylitol or other sugar-free sweetener of choice, cinnamon, whole nutmeg, a microwave safe custard cup or bowl, and a microwave.

My struggle is a little more complex than being tired of eggs — I am not a breakfast eater. I know I should, and I know it’s better for me but in my head breakfast equals weight gain. That’s left over from my anorexic days, I know. So, in order to eat breakfast I have to tempt myself with something really good — and too my?really good?means something on the order of croissants or pastry.

Sadly, I have yet to perfect the low-carb croissant but I am getting better with pastry type things. This low carb French toast is based on the classic Atkins French toast recipe for induction in the original book. I like it with a few pecans and some of my cake batter granola sprinkled on top for crunch but you could use 0-carb syrup or jam, too.

It’s important to eat these as soon as they come out of the microwave. If you wait too long they will collapse and that lovely, fluffy, French toast texture will be gone. Also the French toast will be as thick as the container you cook it in. I cooked mine in a shallow pasta bowl and then cut the circles out with a large biscuit cutter so that they would be pretty.

Ingredients

  • 2 oz Cream Cheese
  • 2 Eggs Beaten
  • 1/8 tsp Baking Powder
  • 1/8 tsp Salt
  • 1 tsp Xylitol
  • 1/8 tsp Cinnamon
  • 1 tbsp Hemp Seeds
  • Pinch Nutmeg Grated

Instructions

  • Spray a microwave safe bowl with cooking spray.
  • Soften the cream cheese in the microwave for about 30 seconds.
  • Whisk the remaining ingredients into the cream cheese until well blended ? there wills still be lumps of cream cheese and that?s ok.
  • Microwave for 1 minute.
  • Beat smooth with a fork and then microwave until puffy and done, about 1 more minute.
  • Grate a little whole nutmeg over the top.
  • Serve hot with butter, 0-carb syrup, or your favorite low carb topping.

    Just tried this for breakfast and i loved it! I served it with butter and sugar free syrup (favourite is Tops brand). Only thing i would change is eliminate the salt – for my taste it wasn’t necessary. Wondering about cutting this in half (mine was quite tall) and frying it before serving. thanks!
