These spicy, gooey, low carb cheese enchiladas just light up your whole mouth with flavor and, believe it or not, they are egg fast friendly!
For this recipe you’ll need: eggs, cheddar, Pepper Jack, grass fed butter, salt, pepper, cumin, smoked paprika, omelet pan

So, during my five day egg fast I lost eight and a half pounds and then gained back about three and a half pounds when I went back to normal low carb eating. I expected that but losing five pounds that stayed off made me very happy!
I don’t normally like eggs much so I was surprised that it was so easy to stay on the fast. It’s amazing how much you can do with the limited allowable ingredients!
Being from Texas I love my Tex-Mex flavors. On the last day of the fast I didn’t even feel like eating but I knew I had to — skipping meals is not a good thing on this fast. I really wanted enchiladas but how in the world do you do that with low carb ingredients? Especially with just eggs, butter, and cheese?
An omelet was just going to be too eggy.
What I did was to mix the cheddar into the eggs. When I cooked the mixture in an omelet pan it made it have a bit more texture than an omelet. I let it get pretty golden on the bottom. With the cumin, smoked paprika, and gooey Pepper Jack inside it really did satisfy my “omigosh-I-need-Tex-Mex” cravings. Sometimes if you can get the texture close enough and the flavor on target you can trick your mind into going along for the ride. I hope you’ll find that this is the case with this recipe. If you’re not doing an egg fast a little guacamole would go really well with this.

Simply Organic Cumin Seed Ground Certified Organic, 2.31-Ounce Container
Simply Organic Smoked Paprika, 2.72 Ounce
Low Carb Cheese Enchiladas
- 2 eggs
- 1 ounce shredded sharp cheddar
- 1 ounce Pepper Jack shredded
- 1 ounce grass fed butter
- Smoked paprika
- Blend the eggs and cheddar in a blender until smooth.
- Set aside.
- Melt the butter in an omelet pan.
- Pour in the egg mixture.
- Cook until golden on the bottom and just set on the top, lifting the egg up with a spatula and letting the uncooked egg flow underneath.
- Top with the Pepper Jack, a little salt, pepper, and cumin. (to taste)
- Fold in thirds and scoop out onto a plate.
- Sprinkle with smoked paprika, a little more cumin, and a few shreds of cheddar.
