Eggs, bacon, cheese, chipotle mayonnaise – this sandwich recipe is perfect for breakfast, lunch, or dinner! You can even freeze a batch of them to have on hand.

I’ve never been a fan of breakfast but if this sandwich is on the menu I’ll be there with my plate in hand. I’ll warn you though – this low carb breakfast sandwich may look small but it keeps you feeling full for a long time. I like to eat it when I know I’m going to be busy and likely to skip meals. Seriously, half of one of these is plenty for me.

I just eat the other half because it’s too yummy to stop.

When I made the bread for this I use a wide round coffee cup rather than a mug. I think it’s a better size for one sandwich. If you use the mug then you’ll get two smaller sandwiches – which may be better if you want less calories. Try a few different containers and see what works the best for you.

So, I am one of those crazy people that loves cilantro. I stuffed a bunch of it in this breakfast sandwich but feel free to use lettuce, alfalfa sprouts (another favorite of mine) or leave the green out all together.

Low Carb Breakfast Sandwich

Quick and easy! This low carb breakfast sandwich is full of bacon, eggs, spicy mayo, and cheese! It goes together fast and can be made ahead in batches and frozen.

Ingredients

  • 1 Recipe Low carb sandwich bread , cooled and cut in half
  • 2 slices bacon
  • 1 egg
  • 1 slice cheese , smoked gouda or pepper jack are my favorites
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon chipotle in adobo ,mashed to a paste
  • 1 tablespoon cilantro , fresh – optional

Instructions

  • Set the bread aside.
  • Mix the mayo and chipotle – set aside.
  • Cook the bacon until it is crispy – cut each piece in half.
  • Break the egg into the bacon fat and  break the yolk.
  • Fry until done – pushing the sides in to keep it approximately the same size as the bread and flipping it once.
  • Toast the bread until lightly golden.
  • spread the mayonnaise mixture on one slice of the bread.
  • Lay the bacon across the other slice of bread.
  • Place the egg on top of the bacon.
  • Lay the cheese across the top.
  • Microwave until the cheese melts.
  • Carefully put the cilantro on the melted cheese add the other piece of bread to the top.
  • Eat while it’s hot!

  2. Hi Marye, Can you clarify the net carbs for the sandwich bread alone? The recipe indicates 3 net carbs, but in one of your replies to a comment about the bread, you say it has Net Carbs 6.1. Something about redoing the recipe template. Thanks!
