Huevos Rancheros Low Carb Style

I am from Texas so huevos rancheros is one of those comfort food breakfasts for me. It’s not exceptionally high in carbs but with the tortillas, beans, and everything it ends up being around 30 carbs. That’s at least 25 carbs too many for my liking. When you remove the tortillas and beans you remove a lot of the flavor. What’s a Texas girl to do?

Yeah. That’s what.

I dispensed with the tortillas and beans that are usual ingredients in huevos rancheros and added flavor by poaching the egg right in the salsa in the microwave. A little sprinkle of queso fresco and fresh cilantro makes it perfect. I added three slices of black forest ham on the side but bacon or chorizo is perfect,too.

All this deliciousness is a measly 1.8 carbs and under 150 calories. Even if you make it with two eggs you are talking under 200 calories!

I like making poached eggs in the microwave because it is easy and fast. Since the egg is poaching in just 2 tablespoons of salsa you can’t make it on it on top of the stove unless you have a tiny pan. You don’t get the same flavor if you poach the egg and then add the salsa.

I use a hot, chunky salsa. Some of the heat is muted by the egg and cheese so don’t use mild salsa, you just won’t have enough flavor. If you can’t find queso fresco then cheddar or Pepper Jack is good, too. I don’t love eggs and that makes it hard to eat breakfast when you are low carbing, doesn’t it? Even with my egg aversion I promise you I could eat this for breakfast every single day. It really is that good.

I am really bad about eating breakfast. I love going out and having a big stack of blueberry pancakes, bacon, and the whole going out to breakfast thing but making my own and eating at home? I’d rather just have a coffee. A BIG coffee. If I can make something delicious fast then I am more likely to eat and if I eat breakfast I am way less likely to shove carbs in my mouth later on.

Ingredients

  • 1 teaspoon of butter
  • 1 egg
  • 2 tablespoons salsa
  • 1 tablespoon queso fresco
  • 1 teaspoon fresh cilantro chopped

Instructions

  • Melt the butter in a small, glass custard cup.
  • Add the salsa.
  • Carefully break the egg into the cup.
  • Cover tightly with plastic wrap.
  • Microwave on high for 40 seconds or until the egg is set to your liking.
  • Sprinkle on the cheese and cilantro before serving.
