Someone stole the fence between the North Pole and Texas! Y’all it is all kinds of cold out there and I am so not a cold weather person! I have been quite happily sitting by the fire today. One thing about big, old houses is that they get drafty and cold in the winter. I am so glad that there is a fireplace in the kitchen since that is where I spend my time. I like to build up a fire in the morning to take the chill off. The dogs don’t like the sound of the flames so they curl up as close as they can get without being too close – the window seat.

Winter makes me want comfort foods. I am not talking about steak and salad – I am talking about pasta, bread, and carbs! Today was chilly and I wanted carbs in a bad way. Luckily I had the stuff for this cream of broccoli soup on hand. Creamy, buttery broth surrounds masses of tender broccoli. This cream of broccoli soup is just so unbelievably good! It totally hit the spot and I enjoyed it so much I had it for supper, too!

I like to get a big bag of broccoli at Costco and cook it all. Then it’s super easy to make soup or whatever when you want something fast. I think that’s the secret, really. The more things I have cooked and ready the less I cave to carbs. Let’s face it – when you get a craving you don’t want to wait for something to cook! You’re less likely to stuff you mouth with carbs if you already have something wonderful waiting.

Ingredients

  • 1 cup cooked broccoli
  • 1 1/3 cups chicken stock
  • 1/2 cup heavy cream
  • 1 tablespoon butter
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Grated cheese optional

Instructions

  • Heat broccoli and chicken stock in a pan.
  • Add the cream and remaining ingredients.
  • Heat through.
  • Spinkle with some grated cheese if desired.

    I loved the simplicity of this recipe. Stuck at home with no heavy cream so I added cream cheese instead. It worked just fine. I used an immersion blender and pureed half the soup after it was tender. That helped to thicken it.

    I just made this and YES it is VERY thin even after I added more of the heavy cream then the recipe calls for, but it has a good taste.

    1. It shouldn’t be thin if you used heavy cream and drained your broccoli. You can simmer it for while to reduce it some – you can try blending up some of the soup with some cooked cauliflower, too.
