Smoked brisket and cheese are stirred into the creamy cauliflower mash. Then it’s quickly microwaved. Finally it’s topped with onions, salsa verde, and cilantro. This is a filling, Texas style, comfort food recipe with just 5.1 net carbs per serving.

BBQ is a big thing here in Texas. We argue well into the starry night about which BBQ is best. In fact, the only thing we argue more about is football. Personally I like a very lean brisket with blackened edges. That blackened part is called “bark” and it’s my favorite part as long as there isn’t fat involved. I can’t do fatty meat. I just can’t.

A dish that nearly every, single BBQ spot in the Lone Star State has on the menu (besides banana pudding) is a big ole bbq style stuffed baked potato. The recipe varies from spot to spot but it’s usually a baked potato with the flesh scooped out and mashed. Then chopped bbq beef, cheese, onions, jalapenos, and all kinds of other stuff is stirred in and the whole thing is baked again.

Delicious, but carby.

Sunday Dinner, Y’all

We almost always stop and get BBQ on the way home from church on Sundays. It’s so nice to not have to cook but just come home, grab paper plates, and chow down. As my kids grow up and move out I have more and more leftover bbq from our Sunday feasts. That’s not a bad thing at all!

Yesterday I couldn’t stop thinking about those darn potatoes. Did I mention they are usually colossal in size? Like, huge. I wanted one so bad that my salivary glands were working overtime. If only I could come up with a similar recipe that was also low carb!

I tried and failed a couple of times but finally came up with a low carb loaded cauliflower recipe that may even be better than those potatoes. It’s creamy comfort food Texas style!

BBQ Baked Loaded Cauliflower

Ingredients

  • 10 ounces cauliflower
  • 1 tablespoon butter
  • 1 tablespoon cream cheese
  • 1/4 teaspoon salt
  • 1/2 pound Beef Brisket Chopped and cooked, preferably smoked)
  • 2 tablespoons salsa verde
  • 2 ounces cheese shredded
  • 1 tablespoon onions chopped
  • 1 tablespoon cilantro chopped

Instructions

  • Steam the cauliflower until very tender.
  • Drain thoroughly and pat dry with paper towel.
  • Add the cauliflower, butter, cream cheese, and salt to a food processor.
  • Process until very smooth and creamy.
  • Stir in the meat and cheese.
  • Add the half the cauliflower mixture to an oven safe small tart pan or ramekin.
  • Bake for 10 minutes at 350 degrees, or until heat through and slightly crispy on top.
  • Remove from oven, add the salsa verde, onions, and cilantro.
  • Serve with extra cheese.

To Microwave

  • Follow the same instructions but place in microwave safe dishes.
  • Microwave for 2 to 3 minutes, or until hot.

    So, what do we do with the OTHER half of the mixture?? One might ask

    Add the half the cauliflower mixture to an oven safe small tart pan or ramekin.
    Bake for 10 minutes, or until heat through and slightly crispy on top.
    Remove from oven, add the salsa verde, onions, and cilantro.

    Serve with extra cheese.
