This low carb BLT wrap with chipotle mayo is the perfect lunch or light dinner when you want something quick but you are craving comfort food. Spicy, creamy, crispy, crunchy goodness all wrapped up in a low carb wrap.

For this recipe you’ll need: low carb wrap, bacon, tomatoes, romaine lettuce, and chipotle mayo (mayonnaise, lime juice, chipotle pepper).

Think about the “normal” food you miss the most. For me? It would easily be a Bacon, Lettuce and Tomato sandwich. BLT’s have always been one of my favorite foods and somehow making a BLT salad just didn’t cut it for me, you know?

The other day I was at the store and I happened to see some low carb wraps that I hadn’t seen before. I picked them up and I just want to tell you that I have made tons of stuff with them… today it was a Reuben Wrap — that recipe comes later. So I decided to see if I could adapt my very favorite sandwich to make it a wrap.

I love, love, love a good BLT Wrap with Chipotle Mayo! Well, a BLT sandwich with chipotle mayo is my favorite but since I am not eating the bread because of carbs the wrap saves the day!

Spicy, smoky chipotle mayonnaise is slathered on the nutty oat and flax wrap and then layered with lettuce, crisp bacon, and sweet, ripe tomatoes. I feel so lucky because I’ve got a garden full of heirloom tomatoes that are really producing right now. It’s been hot here in Dallas but they’ve persevered and managed to keep on going.

My parents always had a garden when I was growing up. I swear my dad could have stuck a dead stick in the ground and it would have taken root and produced apples — he was an avid gardener and he was good at it, too. I can remember helping Mom slip the skins off of tomatoes and making quarts and quarts of stewed tomatoes every summer. When we visited relatives they were always doing the exact same thing. I guess we’re a family that just loves tomatoes!

This has 12 net carbs — a few more than I would usually have for a meal but it does keep me away from regular bread so it’s worth it once in awhile.

These wraps are soft and flexible with a good chewy texture and a “bready” flavor. Give them a try. If you can’t find them locally, TUMAROS Oat with Flax wraps are available online. I’ve also tried parmesan cheese wraps that are amazing in this too.

There is just nothing like a BLT, especially when you use ripe heirloom tomatoes and add a kick of chipotle! Best of all it’s low-carb.

Ingredients

  • 1 Low Carb Wrap I used Tumaros oat with flax 6 net carbs
  • 3 slices crisp bacon
  • 1/2 cup sliced heirloom tomatoes
  • 1/4 cup chopped Romaine
  • 1 tablespoon chipotle mayonnaise

Chipotle Mayonnaise

  • 1/2 cup your favorite mayonnaise
  • 2 teaspoons lime juice
  • 1 tablespoon mashed chipotle pepper in adobo

Instructions

  • Warm the wrap in the microwave for a few seconds
  • Spread with the chipotle mayonnaise.
  • Add the chopped romaine.
  • Layer the tomatoes on top.
  • Add the bacon.
  • Tuck in the ends and roll up.
  • Cut in half to serve

Chipotle Mayo

  • Mix the mayo, the chipotle, and the lime juice until well blended.
  • Keep in the refrigerator in a covered container.
